Air Fryer Lunch Recipes (Indian Tiffin Ideas)

Whether you’re packing a tiffin or making a quick lunch at home, the air fryer handles the dry, crispy parts of an Indian thali well. Pair them with dal or curd from the stove for a complete meal.

Crispy bhindi fry

  1. Wash and dry 250 g bhindi completely before cutting. Wet bhindi turns slimy.
  2. Slice into rounds or slit lengthwise. Toss with 1 tsp oil, ½ tsp each chilli, coriander powder and amchur, a pinch of turmeric and salt. Add 1 tbsp besan for extra crunch.
  3. Air fry at 200 °C for 12–15 minutes, shaking every 4 minutes, until crisp.

Masala arbi

  1. Boil 300 g arbi until just tender, peel and flatten or halve.
  2. Toss with 2 tsp oil, ajwain, chilli, coriander powder, amchur and salt.
  3. Air fry at 200 °C for 15–18 minutes, turning once, until crisp-edged.

Paneer tikka kathi roll

Make air fryer paneer tikka, then roll it in a roti or paratha with sliced onions, green chutney and a sprinkle of chaat masala. It’s one of the best tiffin lunches, and still tasty at room temperature.

Curry and dal: use the stove

The air fryer can’t cook dal or rice well; we tested it in dal chawal in the air fryer. Use it for the crispy side and paneer, and the stove or pressure cooker for gravies. Our matar paneer and paneer butter masala show how to combine both.

Tiffin tips

  • Cool before packing so steam doesn’t make crispy food soggy.
  • Pack chutney separately.
  • Batch on Sunday: shape and freeze cutlets, then air fry fresh each morning in 15 minutes.

Frequently asked questions

Can I make a full Indian lunch in an air fryer?

Not quite. It’s great for sabzis, tikkas and snacks, but dal, rice and gravies are better on the stove. Combine the two.

How do I make bhindi crispy in an air fryer?

Dry it completely before cutting, add a spoon of besan, and cook in a single layer at 200 °C.
