Most “my air fryer food is soggy / burnt / bland” problems come down to a handful of mistakes. Here are the 12 most common ones we see, why each happens, and the exact fix.
Quick reference
| Problem | Likely mistake |
|---|---|
| Soggy, pale food | #1 overcrowding, #3 wet food, #4 no oil |
| Burnt outside, raw inside | #6 temperature too high, #7 pieces too big or uneven |
| Uneven browning | #2 not shaking or flipping |
| Smoke | #9 dirty basket, #10 fatty food without water in the drawer |
| Coating falls off | #5 runny batter |
| Paper or foil burning | #8 loose liners during preheat |
1. Overcrowding the basket
Why it’s a problem: hot air can’t reach every surface, so food steams in its own moisture.
Fix: cook in a single layer with small gaps, and do two quick batches rather than one crowded one.
2. Not shaking or flipping
Why: the heating element is above the food, so the top browns first.
Fix: shake small items (fries, peanuts, chickpeas) every 5–6 minutes; flip larger items (cutlets, tikka, chops) halfway.
3. Cooking wet food
Why: surface water has to evaporate before browning can start.
Fix: pat vegetables, paneer and soaked potatoes completely dry with a kitchen towel.
4. Using no oil, or far too much
Why: no oil leaves coatings dusty and pale; too much oil drips, smokes and goes greasy.
Fix: a light brush or spray, about 1 tsp per batch. An oil sprayer is the most useful accessory you can buy (see accessories).
5. Using runny batter
Why: liquid batter drips through the basket before it sets.
Fix: switch to a thick paste coating or a slurry-and-breadcrumb coat. See paneer pakoda and veg cutlet.
6. Using oven temperatures
Why: the air fryer cooks faster and more intensely than an oven.
Fix: lower oven temperatures by about 15–20 °C (25 °F) and cut time by around 20%. See the temperature guide.
7. Uneven or oversized pieces
Why: small bits burn while big ones stay raw.
Fix: cut evenly, and cut dense foods like potato smaller than softer ones like cauliflower (as in aloo gobi).
8. Preheating with loose parchment or foil
Why: without food on top, the fan can lift it into the heating element.
Fix: add liners only with food on them, and never cover the whole basket floor. More: foil in an air fryer.
9. Not cleaning after use
Why: old grease smokes, smells and makes food taste stale.
Fix: wash the basket and drip pan after every use once cool, and wipe the inside occasionally. Guide: how to clean an air fryer.
10. Ignoring dripping fat
Why: fat from chicken skin or cheese hits the hot drawer and smokes.
Fix: pour off fat midway, or add a few tablespoons of water to the drawer under the basket (not on the food). See why does my air fryer smoke?
11. Blocking the vents
Why: the air fryer overheats and may switch itself off.
Fix: leave 10–15 cm of space behind and above it, and don’t use it under low cabinets. If yours keeps cutting out, read air fryer keeps turning off.
12. Using metal tools on the basket
Why: scratches damage the non-stick coating, which then wears and can rust.
Fix: use silicone or wooden tongs. Already scratched? See air fryer rusting.
Frequently asked questions
Why is my air fryer food not crispy?
Usually overcrowding, wet food or no oil on the surface. Cook in single layers, dry the food and spray lightly with oil. For fries specifically, see why are my air fryer chips not crispy?
Should I put water in the air fryer?
Only a little in the drawer under the basket when cooking fatty foods, to reduce smoke. Never pour water into the main unit.
Can I open the air fryer while cooking?
Yes. Pulling out the basket pauses most models, and it’s how you shake or check food. Push it back in fully so it restarts.
