Air Fryer Side Effects (and How to Avoid Them)

Air fryers are generally safe and a lighter way to cook, but there are a few genuine downsides worth knowing. Most come from over-browning food, misuse, or relying too much on processed frozen snacks, not from the air fryer itself. Here they are, honestly, with how to avoid each one.

This article is general information, not medical advice. If you have a specific health condition, talk to your doctor or a registered dietitian.

Air fryer side effects and downsides

Side effect Why it happens How to avoid it
Acrylamide in over-browned food Starchy foods cooked dark brown at high heat Cook to golden; soak cut potatoes
Worn or flaking coating Metal tools, abrasive scrubbers, age Silicone tools, soft sponge; replace damaged baskets
Smoke and burnt smells Grease build-up, fatty food dripping Clean after every use; a little water in the drawer for fatty foods
Dry or chewy food Too long, too hot, no oil Light oil spray; follow time charts
Eating more fried-style food “It’s healthier” so portions grow Portion snacks; cook whole foods, not just frozen
Plastic smell when new Manufacturing residues burning off Wash and run empty for 10 min in a ventilated room
Burns Hot basket, steam when opening Pull out slowly; use tongs
Fire risk Loose parchment or foil, blocked vents Never preheat with loose liners; keep vents clear
Noise High-speed fan Normal; see air fryer making noise if it’s unusual

1. Acrylamide from over-browning

Acrylamide forms when starchy foods are cooked very brown at high temperatures, in any appliance. IARC classifies it as “probably carcinogenic to humans” (Group 2A). Studies disagree on whether air frying produces more or less than deep frying, so the practical advice is the same: aim for golden, not dark brown, and soak cut potatoes before cooking. 2. Damaged non-stick coating

A scratched or peeling basket can let food stick, rust can develop, and flakes can end up in food. Use silicone or wooden tools and soft sponges, and replace the basket if the coating is visibly flaking. Prefer no coating? See air fryers without Teflon. Seeing rust? Read air fryer rusting.

3. Over-reliance on processed snacks

It’s easy to fall into a routine of frozen nuggets and fries because they’re quick. Air frying lowers the oil, but not the salt or the processing. Balance them with home-made options like roasted chickpeas, paneer tikka and roasted vegetables.

4. Dry food

Air fryers dry surfaces fast. That’s what makes food crisp, but it also makes lean food dry if overcooked. Use marinades with curd, brush with a little oil, and follow our cooking time chart.

5. Smoke and smells

Usually caused by old grease or fat dripping onto the hot drawer. Clean the basket and drawer after every use. More: why does my air fryer smoke?
