Eggless banana muffins
Ingredients
- 2 ripe bananas, mashed (about ¾ cup)
- ⅓ cup (70 g) brown sugar or powdered jaggery
- ¼ cup (60 ml) oil or melted butter
- ¼ cup milk
- 1 cup (125 g) maida or ½ maida + ½ atta
- 1 tsp baking powder + ¼ tsp baking soda
- ½ tsp cinnamon, a pinch of salt
- Optional: chopped walnuts or chocolate chips
Method
- Mash the bananas and whisk with sugar, oil and milk.
- Sift in the flour, baking powder, soda, cinnamon and salt. Fold until just combined. Lumpy batter is fine.
- Fill silicone or paper cups (inside foil cups for support) about ¾ full.
- Preheat to 160 °C. Bake for 12–15 minutes until a toothpick comes out clean.
- Cool for 5 minutes before removing from the cups.
Variations
- Chocolate chip: skip the banana; use ½ cup curd + 2 tbsp cocoa
- Atta-ragi: replace half the flour with ragi flour
- Cupcakes: use our vanilla cake batter
Air fryer baking tips
- Check your tin fits with at least 1–2 cm of space around it for airflow. A 15 cm (6 inch) tin fits most 4 L+ baskets.
- Bake low: 150–160 °C. The element is close to the top, so higher temperatures brown the top before the middle cooks.
- Cover loosely with foil if the top browns too early, and tuck the edges in so the fan can’t lift it.
- Preheat for 3 minutes for a more even rise.
Silicone cups are air fryer safe; see silicone moulds in an air fryer.
Frequently asked questions
How long do muffins take in an air fryer?
12–15 minutes at 160 °C (320 °F), depending on cup size.
Why did my muffins sink?
Usually underbaked or the temperature was too high, so the outside set before the centre. Use 160 °C and test with a toothpick.
